Paleo Almond Bread

Today I made almond bread. Its got a lot of protein, fiber, and calories. Great for weight gain or a high energy food for hikes. Oh it's paleo too. Its pretty dang tasty.

Ingredients

2 - 2 1/2 cups of almond flour

1 tablespoon of baking powder

4 whole eggs

5 tablespoons of organic coconut oil

1/2 cup hot water

Something to keep it from sticking to your pan

Baking Instructions

Preheat the oven to 350 degrees. Mix the dry ingredients then the wet. Combine them. After combining mine I added dried cranberries, apricots, and banana chips. I find that regular bananas can add a bit too much moisture to the bread. You can add ground flaxseed or other stuff as well. Poor your almond muck into a 4x8 pan and bake for 40 minutes, longer if needed. 

Here are a few photos of the finished product. If I had planned ahead I would have taken a photo of the ingredients and mixed up sludge batter.
